Ingredients
- ½ head cauliflower
- 1 tbsp cumin seeds
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tbsp olive oil
- 100g almond flour
- 50g coconut flour
- 1 tsp xanthan gum
- 1 tsp salt
- 100g butter
- 50g cream cheese
- 1 egg
- 2 tsp apple cider
- vinegar
Instructions
- Take the cauliflower and cut into small florets.
- Toss in a small amount of olive oil and the cumin seeds.
- Roast for 30 minutes at 375°F until browned and crispy. Let cool for 10 minutes.
- Add all cracker ingredients into a food processor and pulse until combined. Wrap in cling film and freeze for 30 minutes.
- Roll between 2 sheets of parchment paper and slice into crackers. Bake for 25 minutes at 350°F, flipping halfway through.
