Ingredients

  • ½ head cauliflower
  • 1 tbsp cumin seeds
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 100g almond flour
  • 50g coconut flour
  • 1 tsp xanthan gum
  • 1 tsp salt
  • 100g butter
  • 50g cream cheese
  • 1 egg
  • 2 tsp apple cider
  • vinegar

Instructions

  • Take the cauliflower and cut into small florets.
  • Toss in a small amount of olive oil and the cumin seeds.
  • Roast for 30 minutes at 375°F until browned and crispy. Let cool for 10 minutes.
  • Add all cracker ingredients into a food processor and pulse until combined. Wrap in cling film and freeze for 30 minutes.
  • Roll between 2 sheets of parchment paper and slice into crackers. Bake for 25 minutes at 350°F, flipping halfway through.
