Ingredients

  • ½ cup almond flour
  • ½ cup peanuts
  • ½ cup cashews
  • ½ cup butter
  • 2 cup cream cheese
  • ¾ cup sour cream
  • 1/2 cup sukrin
  • 3 eggs
  • 2 tbsp vanilla essence
  • 1 tbsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp salt

Instructions

  • Add the almond flour, peanuts, cashews and butter to a food processor and pulse until smooth.
  • Press into a lined and greased 8 inch springform pan.
  • Bake for 10 minutes at 350°F. Remove and let cool.
  • Add the rest of the ingredients to a blender and blend until smooth. Pour into the tin and bake for 40 minutes at 325°F until a knife inserted into the center comes out clean.
  • Serve with strawberries.
