  • 6 rashers streaky bacon
  • 2 eggs
  • capsicum
  • ½ avocado


  • Preheat the oven to 350°F.
  • Spray a Texas muffin tin with oil – ideally olive or coconut.
  • Lay 3 slices of bacon in each muffin hole so they form a case.
  • Cook in oven for 5 mins.
  • Crack in an egg and top with diced bell pepper.
  • Return to oven until cooked, about 5-10 minutes.
  • Top with smashed avocado.
